Vietnamese Phrases: Eating and Drinking

To order food in Vietnamese, point at the dish and say cho tôi món này (give me this one), then add *không cay* (not spicy) or *tôi ăn chay* (I'm vegetarian) if you need to. The tables below cover the menu words, the cooking methods, coffee and the herbs on your plate.

Ordering at a restaurant or street stall

Vietnamese food is fresh, varied and cheap, and the best meals are often in small places with no English menu. A handful of phrases lets you order, ask for what you want left out, and pay. The menu is thực đơn, and a restaurant is a nhà hàng, though most people eat at a quán (a casual eatery or stall).

Dzô is the southern toast, usually shouted after counting “one, two, three”. In the north you may hear một, hai, ba, vào or trăm phần trăm (a hundred per cent, meaning bottoms up).

Chiên is the southern word for fried and rán the northern one. Kho is the slow braise you’ll see on menus as cá kho (braised fish) or thịt kho (braised pork), cooked with fish sauce, sugar and pepper, often in a clay pot.

Phở, bún and hủ tiếu are different noodles, and the last is a southern favourite you’ll see on every Saigon street corner. For a drink with food, order water as nước and ice as đá, and add cho tôi một ly rượu vang đỏ (a glass of red wine) or rượu vang trắng (white wine) at a restaurant that has a list.

In the south, cà phê sữa đá (iced coffee with condensed milk) is the famous one. At a quán cà phê you can pick the drink and the sweetness: ít đường is less sugar, không đường none. Nước mía (sugar-cane juice) and sinh tố bơ (avocado smoothie) are everywhere and worth trying.

Bowls of phở and bún come with a plate of herbs, bean sprouts and lime (rau thơm, giá and chanh) that you tear into the bowl yourself. Say không ngò if you don’t like coriander.

Questions travellers ask us

How do you say vegetarian in Vietnamese?

Tôi ăn chay means I eat vegetarian food, and it is understood everywhere. Chay also describes the food itself: a quán chay is a vegetarian restaurant, and Buddhist temples often have one nearby. Add không nước mắm (no fish sauce) as well, since fish sauce goes into many dishes that look vegetarian.

How do you ask for the bill in Vietnamese?

Tính tiền, please, or cho tôi tính tiền. In the south you will also hear people call out to the waiter with anh ơi or em ơi (hey, brother or hey, younger one) and then say tính tiền. In a street-food place you can catch the eye of the staff and make a writing motion in the air.

How do you order coffee in Vietnamese?

Cà phê đá is iced black coffee and cà phê sữa đá is iced coffee with condensed milk, the classic. Hot versions add nóng. Cà phê đen is black, and in Saigon bạc xỉu is the milkier, sweeter version of cà phê sữa. Ask for ít đường (less sugar) if the standard cup is too sweet.

How do I say I don't want chilli?

Không ớt means no chilli, and đừng cay quá means not too spicy. Say it when you order, because chilli is often added at the table or in the sauce, and a bowl of nước mắm pha with chopped chilli may come on the side.
